Canned Food Alliance Contest!!

Hello everyone. I won a chance to host a canned food alliance contest on my blog!! If you win you will get a $25 grocery gift card. The contest will end on Sunday the 28th and that’s when I will pick my winner. All you have to do is to watch the field to table video at Then share a fact that you have learned from the video. After you share a fact I need you to share a recipe of your own that contains at least 2 canned food items. Have fun and Good luck!!

  1. I thought the video was really helpful and interesting. I had no idea that experts follow the food from the farmer’s field to the canning process, checking everything for quality control. Makes me feel a lot safer about eating canned foods! Here’s a recipe my family loves. It’s very quick, easy and uses canned foods!

    Tortilla Pie

    1 15 oz. can black beans, drained & rinsed
    1 15 oz. canned corn, drained
    1 cup of mild salsa
    1 8 oz. can of tomato sauce
    6 oz. pepper jack cheese, shredded
    1/2 cup fresh cilantro, chopped
    2 green onions, thinly sliced
    1/2 teaspoon ground cumin
    4 10-inch flour tortillas
    1 tablespoon olive oil
    sour cream

    Preheat oven to 450 degrees

    Stir together beans, corn, salsa, tomato sauce, cheese, cilantro, green onions and cumin in large bowl.

    Heat 12 inch skillet over high heat. Brush both sides of each tortilla with oil and fry, turning over once, until golden in spots.

    Place one tortilla in greased, shallow pan. Spread with 1-1/3 cups of filling. Repeat layer twice, then top with remaining tortilla.

    Bake until filling is heated through, about 12 minutes. Transfer to platter and cut into pie-like wedges. Top with sour cream. Enjoy!
